Vinification

The grape harvest takes place in the first ten days of October, followed by a maceration on the skins of about 10 days. At the end of the alcoholic fermentation, the skins are removed and the malolactic fermentation is waited for before proceeding with the decanting of clarification. Bottling takes place in the spring following the harvest and marketing begins after at least four months of bottle aging.

Pairings

Served at a temperature of 18 ° C, it goes well with dry first courses, meat-based main courses and medium-aged cheeses.
