Vinification

The grape harvest takes place in the second decade of October, followed by maceration on the skins for about 20 days. At the end of the alcoholic fermentation, the skins are removed and the malolactic fermentation is waited for before proceeding with the decanting of clarification. Refinement in French oak barrels begins in the spring following the harvest and lasts at least 12 months.
This is followed by a further stop in steel and a further 12 months of refinement in the bottle before being marketed, which begins about four years after the harvest.

Pairings

It goes well with the tastiest dishes such as game, fine cuts of grilled or stewed red meats and aged cheeses.

It is recommended to uncork at least one hour before serving. Serve at 18 ° C.
