Vinification

The grape harvest takes place in the second decade of October, followed by fermentation on the marc for 15 days at a controlled temperature. Then begins a long stop on the fine lees (battonage) during which the malolactic fermentation takes place.

From the following spring we proceed with the decanting. Bottling takes place after a stop in the cellar for at least one year and marketing after a further six months in the bottle.
